Let’s Get Wild and Freekeh!

It’s hip, it’s delicious, and it’s healthy! Freekeh…known as Farīk (ﻔﺭﻴﻚ) in classical Arabic, is an immature hard wheat that goes through a roasting process as it is being produced. The point at which freekeh is prepared is of utter importance. It is harvested and arranged in small piles, and then left in the sun to dry. These piles are later put on fire (the roasting process) and prepared to perfection with expertise. The roasted wheat then undergoes further processing and roasting to achieve the final product. The seeds are cracked and eventually resemble green bulgar. Freekeh is very popular throughout the Middle East in places such as Egypt, Turkey, Tunisia, Syria, Jordan, and even in Lebanon. Freekeh has more nutritional content than rice, and is rich in protein, vitamins, and minerals. It has a nutty and smoky undertone, and many believe it may be suitable for a gluten- free diet.
