Forget about the store bought pesto people! You can easily whiz up your own homemade concoction in a flash. No fancy qualifications needed either; just a few necessary ingredients and you are good to go.
- Invest in 2 cups of fresh basil leaves (packed), 1/2 cup of grated parmesan cheese, 1/2 cup of virgin olive oil, 1/3 cup pine nuts, a few garlic cloves, and some salt and pepper to taste.
- Combine the basil with the pine nuts in a food processor and give it a whirl; then add the garlic and cheese and give it a few more whirls.
- Slowly add your olive oil while the food processor is running and scrape down the sides with a spatula every once in a while.
- Add salt and black pepper to taste and you are ready for pasta night with the family.
Pesto can be used on your favorite pasta, spead over a chicken breast, added to your salad dressing, and used as a spread on your daily sandwich!
