It is such an easy dessert to make and everyone loves this simple comfort food – both young and old. Dump your leftover rice into a small pot – you should have around 3 1/2 cups of it, more or less. Add to it approximately 2 ½ cups of milk and 2 ½ cups of cream. Add a pinch of salt and 2/3 cup of sugar; then begin to stir over low heat. This mixture will thicken to your liking as you stir occasionally for half an hour. Once thickened, add about 1 tsp of vanilla extract and a tsp of cinnamon. You can even add a ½ cup of raisins which have been sitting in hot water to plump up nicely. Mix and pour into small bowls to be placed in the fridge once cooled to room temperature.
